The Restaurant  

As restaurants begin to realize the importance consumers are now putting on letter grades, there is a new factor added in the success of their restaurant. 

  • In a study done by a Stanford University economist it was found that, "establishments earning an A obtained an average of 5.7 percent higher revenue than before the grade cards were required.  B grade restaurants experienced a 0.7 percent increase.  For C grade restaurants revenue decreased by 1 percent" ("Economist Finds", 2004).
The fact that health standards have been improved among restaurants is evidence to the success of the health inspection grading program.

  • In January 2008 Los Angeles County released the following data: "the first six months of the program [...] 39.9 percent of restaurants earned the 90-100 inspection points required for an A. By mid-2007, 82.5 percent of restaurants merited the top mark" (Perdomo, 2008).
If consumers start to put pressure on restaurants and the standards they should be keeping up with there will be success all across the board. Consumers will benefit by not getting sick, and restaurants will increase their revenue by having a visible manifestation of their cleanliness and food preparation.
